I am interested in what the 6 exclusive belgian ales will include. Also love to see dekonick gift pack should be nice. I really liked there abbey style ale when I had it. I think its the Brouwerij Van Steenberge 6 pack that comes every year. The standouts are Gulden Draak and Piraat, the rest are o...

Even better still would be a dark cherry porter of some kind to give it that tang from the cherries. Black Oak! Another option might be Neustadt Big Dog Porter. zane9, I've made carbonnade flamande many times using different styles of Belgian ale (Flemish Brown, BSDA, dubbel, etc.). The recipe I've...

Has anyone figured out something to make with IPA or a hoppy pale ale? I'm afraid of reducing the beer down to pure bitterness. A good eats episode made some cheesey beer bread but thats not fancy enough. Some ideas would be appreciated. IPAs are tough for that very reason. However, I have had a lo...

I'm glad I got a few people cooking with Trois Pistoles which can work better than the pricier Chimay beers. I had the flank steak with peppercorn sauce a la Trois Pistoles at Fourquet Fourchette in the Palais des Congres de Montreal last week. It is a worthy culinary ingredient to be certain, irre...

I try different guides, for example I used the Eyewitness for Hamburg Germany because nobody else makes one. Eyewitness weigh a TON. But they make nice coffee table books with the pictures and drawings. I usually rely on guides Rick Steves, or Cadogan from the UK if you can find them. No mainstream...

Marzen Help

Now that I have a temp. controlled ferm. chamber, I'm going to take my first stab at a lager and brew an Oktoberfest/Marzen. I've put together a 10 gallon recipe that I plan to split and ferment with 2 different lager strains. Any feedback from the lager brewers out there would be appreciated.. Marz...

That looks like a fine recipe for a Galaxy DIPA, though I do think S-04 is disgusting, and would never ever think of using it in anything, but particularly not a DIPA. Just my opinion of course... Of course. And I used to feel the same way. However I've found that if you keep the fermentation tempe...

A great, compact day planner is the Knopf Map Guide, plus it's useful to google map / print off the pubs downtown, lower St Denis area and (IMO) the best ones around the Plateau. A walking 'beer route' is one of those great ways to explore the city, and the Knopf guide is a good primer for undiscov...
