Re: Brothers Brewing
Clearly some kickstarter/crowdfunding campaigns are more about marketing, customer engagement, and building loyalty than an actual need for hard cash to establish the business. Look at the campaign launched by the start-up SHED Brewing in Dundas (Hamilton). The objective is to restore the original b...

Four Fathers Brewing Co.
Kevin Freer has announced that he's leaving Wellington Brewery to become the brewmaster at Four Fathers Brewing Co. This is a start-up, and Kevin says there will be a couple of brands being contract-brewed while the new brewery is built out. A location has not been finalized, but I think it will be ...

Re: New Arrivals at LCBO & TBS
NAC says: "It is a beer store brand and is shipping out one depot at a time. It has an Lcbo number as it is also an Lcbo combination/ Beer store brand. This brand shouldn't be available in conventional Lcbo's" The contradictory spin coming from NAC makes me skeptical about anything they h...

Re: GTA Coffee
I've heard or read that the problem of blade grinders is complete randomness of the size of bean particle, and therefore uneven extraction. So a very good grinder should give a fairly even-sized 'grain.' I've also heard from roasters at my local café that adequate rest time (few days) to blow off b...

Re: GTA Coffee
Will be on the sieve idea asap! I do more or less the same as you, when starting the roast. But no bean shaking or stirring for me. I go 2 minutes at high-fan-low-temp, to get the beans to an even colour. I let the roast take its time to get to FC. Depending on the bean, and roast profile I want, th...

Re: Cask Days 2015
We did Cask Day 1, evening session. We opted for Ralph's Reality tour in the early admission. Poor Ralph had laryngitis, so he walked with us while Luc led the tastings. He's a brewer from Quebec who is opening his brewery in Toronto soon. He brews with BarVolo and likely many of you know him. His p...
