I think it mostly comes from the Brettanomyces and other yeasty goodness.

For me I cant get enough of Orval. It has a barnyard/horse barn funkiness to it that makes it so different from the other Trappist beers.

Just wondering if we will be seeing it this year? I can only hope it got delayed not cancelled.

I would also add zip lock bags to your list. They come in handy if a bottle somehow manages to break.
