you're right about ethyl carbamate (urethane), yes, it occurs with fermentation. the most difficult things to keep it under control with are old barrel aged bourbons, sherries (i.e. fermented products that are then heated, baked, distilled) and so forth - with which we have had trouble with the LCBO...
