Thanks for the input. Anyone who grows hops, the noblest bine on the planet, is someone to be listened to. Chinook it is.

Hello Publican,
No worries about Session. This is our flagship beer, both on draught and in cask conditioned "Dry Hop" form. I will continue to brew it as our only regularly produced ale. Both Black Irish and IPA will be seasonals only.

Anyone have an opinion about the suitability of Chinook hops in big IPA's? I am seriously considering using a big whack of them in my IPA next spring, maybe with a little Willamette thrown in as well.
Let me know.

It was good to chat with you at the 'Judge last weekend. Bartowel is proving to be a very valuable insight into the wants of the beer educated. I am always open to ideas about seasonal ales and comments on our existing line, Session, Black Irish Porter and Dry Hop Cask Bitter. I am currently working...

The lawsuit over the Dragon's Breath name seems to be a reality as Desnoe's and Geddes, the...

Hi Manul, I am not deliberately ignoring the non-Downtown area. We are a draught only operation, and due to the prohibitive costs of bottling, we probably will remain this way for some time to come. If there are any good prospects for draught in your neck of the woods, let me know. I'll try to get t...

Hi Cass, Just a bit of shameless self promotion, but I would like to mention that Scotch Irish Brewing Co.'s Black Irish Plain Porter is back in production for the fall/winter season. For those readers who attended the Toronto Festival of Beer, you may have tasted Black Irish. It was an overwhelming...

Hi, I'm Perry Mason (ya, that is my real name) and I was wondering if all the hop heads were serious when they asked for a "real" IPA. An honest to goodness, 6%+ alcohol, 55+IBU India Pale Ale. Please let me know if there is a demand for this. I love this type of ale, and I am considering ...
