Have the craft brewers looked at the possibility of establishing something akin to the produit trappiste authentique or appelation d'origine controlee designations for craft beer? Perhaps they could look at employing the Brewer's Association definition of a craft beer as the standard. Isn't that th...

Clearly this is a big issue right now, found this article this week: http://management.fortune.cnn.com/2012/11/15/big-beer-craft-brewers/ I love this quote from Greg Koch from Stone: "It's my personal philosophy that the truth should be easy to understand and require no special knowledge"...

I quite like getting coffee roasted the day of the brew and then adding it during the whirlpool. Since the water isn't boiling, you don't get the astringency or bitterness. You're essentially brewing the coffee into the whirlpool. I mean, Russ' answer is probably a better answer technically, but I'...

The amounts to add would depend on the body and current flavour profile of your stout. Having said that, I think if you add 2-3 oz. of ground coffee beans (of a robust variety), and 1-2 split vanilla beans, and let that infuse for about 1 week, you will likely achieve your desired result.

I just can't help but feel skeptical and concerned about motives. It reeks of opportunism and someone playing "me too". Put that way, perhaps the same can be said with respect to the relatively large number of new 'legit' microbreweries that have popped up in Ontario in recent years, atte...

Last year I had the privilege to attend a beer sensory course held by Chris Williams (I think I've got the last name correct!) of Sleemans. It was a really fantastic course in which we got to try beers with every sort of off flavour in them. What as really neat was to see how some people could be r...
