Brewing a Saison in a few weeks and I'm on the fence about a starter. I really want decent ester production. Using Wyeast 3711, 6 gal batch, OG 1058. There doesn't seem to be a clear answer regarding intentionally underpitching and ester production on the internets. Mark, perhaps you could chime in?...

I used to love ST IIPAs, but I find them to be way too cloying and not enough aroma hop character. Either they are mashed too high or there's an overuse of carapils. Not the best example of the style by a longshot.

Got the Sorachi from Bob at beer and wine filter. I'd recommend it, as it's pretty versatile; IPAs/IIPAs, saisons, US wheats. I've heard people complain that it's like lemon pledge if overused. I don't think I'd ever do a single hop IPA with it, but I think it works well with C hops in an IPA.

Unearthly had a production date of june 22 2010, so it's definitely not the LCBO. So it's either me or Southern Tier.

I doubt it was the time at LCBO. The 2xIPA I got had a production date of June 22. Unfortunately the Unearthly has a production code that I can't decipher.

This beer does not fade that much in my experience. In the past I've had 9 month old bottles that had bright hop aroma.
