30 IBU? Really? This was really bitter. So much more bitter than I would have imagined.

Not saying I didn't like it. I did like it. Just that it's more bitter than I would have thought.

I wonder if that lacto-soured pumpkin beer could have been reduced and added to a pumpkin cheesecake... hmm... I aged a couple from last year, too...But my Shipyard was a little muddled... I could see that, and as I recall the St. Amby aged VERY weirdly for me, even in the fridge, going very 'soft'....

Could the occasional reference to a hazy appearance be chill haze? The beer itself is fairly fresh, so any chill haze wouldn't be permanent yet - the beer would clear up as it warms. If some people are reviewing it colder than others, then that would account for the differences in appearance.

Yeah, I found it messy and I love a good malt bomb, but this wasn't great. At least fresh...One would hope that age would straighten it out, but I'm thinking it would take A LOT of age... I don't know man - even if the flavours manage to knit together a little tighter, I don't think aging would do ...
