Sang du Chene but also the Manhattan is no slouch at all. The Apricot is a sour-fest and the easiest on the wallet.
Having another Apricot, I would say it's definitely improving with cellaring. Acidic profile is strong but a bit finer and lemon-tangy. The aroma of fruit is still great, and there are some minty herbals appearing. I bet over 5-6 years this stuff will get really interesting. I am now tempted to buy a few more!
Bottle-conditioning ages beers on lees sediment, which adds complexity. Do not drink any of the sediment though.
