brewed up a saison Wednesday night with this yeast. Re-hydrated and saw visible signs of fermentation within 12 hrs. This morning found a nice amount of krauzen in the airlock so installed a blow off tube. It's chugging away nicely at 20/21 Celsius. Impressed so far with it, we'll see where it ends up finishing.

Any update on the end result? I've been brewing with 3711 for three batches now and I am ready to try something different.

Yep, sorry about that. My saison finished around 1.004 - nice and dry. Overall I'm really happy with the yeast - peppery/spicy finish. Will be using it again for sure.
