Westy 12 update - when to drink?

Post by atomeyes »

I'm friends with a Belgian beergeek who knows the monks at St Sixtus.

The old rule of thumb was to age your Westy 8 and 12 for 5-6 years. the quality's appeared to have changed lately and he's suggesting to drink it by the date stamp on the cap i.e. within 3 years of bottling.

Something to think about if you've been cellaring your Westies. I have some that i bought in 2011 that i'll be consuming now versus in 1-2 years.

Not sure if any of you have any experience with this.

and i've had the fortune of having sampled some old Westy 12s back in 2008 and 2011. They turn into a delicious caramelized brown sugar with proper aging, as opposed to kind of tasting like St Berny Abt 12 when relatively fresh.

I imagine that 3 years is probably just about optimal anyway. I can see how it would go 5-6, but 3 will accomplish a lot of the oxidative aging you want.

Damn, I was hoping to hold on to one until my son was 18.
:D

Guess I'll have to drink them sooner.

Is that because no one wants to buy it twice?

drank a cap-stamped June 2013 tonight. got it in a trade with a BTer, so not sure how it was stored, etc.
probably one of the weaker Westys i've had. oxidized a bit too much. no bass, too much treble.

Not true. I would drink the hell out of Westy in Belgium or Holland, from different bottlings so I could get to know this complex and inconsistent beast. Just not paying grey market prices for it here, too much scarcity for it while St Bernardus 12 and Rochefort are around (OK the Roche 10 not so often, but the 8 is still incredible.)

From the Sint-Sixtus website:

"The Westvleteren “Trappist” is sold exclusively at the abbey store, and only after having made a reservation by telephone."

"Conditions
Westvleteren Trappist is sold only to individual customers. Every customer agrees not to re-sell the beer to any third party."

One of the biggest problems with the current system of beer distribution/sales in this Province is that most of the agents are Mickey Mouse.

Yes the monks of St Sixtus did a fine job of preventing their beers from becoming commercial exploited… their strategy really worked so well.
