Westy 12 update - when to drink?
Westy 12 update - when to drink?
I'm friends with a Belgian beergeek who knows the monks at St Sixtus.
The old rule of thumb was to age your Westy 8 and 12 for 5-6 years. the quality's appeared to have changed lately and he's suggesting to drink it by the date stamp on the cap i.e. within 3 years of bottling.
Something to think about if you've been cellaring your Westies. I have some that i bought in 2011 that i'll be consuming now versus in 1-2 years.
Not sure if any of you have any experience with this.
and i've had the fortune of having sampled some old Westy 12s back in 2008 and 2011. They turn into a delicious caramelized brown sugar with proper aging, as opposed to kind of tasting like St Berny Abt 12 when relatively fresh.

Not true. I would drink the hell out of Westy in Belgium or Holland, from different bottlings so I could get to know this complex and inconsistent beast.
