I've been saving a Cantillon Gueuze (the true champagne of beers) for my wedding day. Six more months to wait...

Thats tough. I have a couple bottles that are probably among a handful left:

Bushwakker Centennial Wheatwine from 2004 and Fat Cat Barleywine from 2004.

Other than that I can't think of anything I have that would be hands off.

I have been saving a bunch of Fullers vintage to do a vertical tasting, an Avery the Beast that I am too scared of to open without a bit more age on it, and a Westy 12 that will probably make an appearance with my fiance sometime this year. Other than that not much.

I've had a series of beers that I've saved for a special occasion and then subsequently drank because I just felt like it :D

But there are a few that I am saving to share with my kids when they get a bit older:
- Unibroue 2005 (daughter)
- Thomas Hardy 2007 (son)

Mostly because it is just so damn big, and I only have 1:

DFH World Wide Stout 06

I've got a nice collection of Impy Stouts set aside for a tasting at some point in time, the plan would be to finish with the WWS.

Loving these posts of older or cherished beers. It's neat seeing the wide variety of beers everyone has. As with many of you I also tend to drink my "cherished" ones too fast. I've been stashing up on the Fullers Vintages the past 3 years, once I get to 5 years I think I'll do a vertical!

Hmm good thread. Some tasties in here.

I have quite a few verticals I'm putting aside (Fullers VA 2003-2008), (Stone Epic 05-06-07-08) but nothing I can say I'm freaking out to open. I tend to drink the mind-blowing ones fast so they dont lose their punch... like old Westy's and Dogfish 120s... leaving that stuff age is a sin.
