The yeast will mulitply to MANY times the amount that is in those two packets. It just means they won't spend as much time mulitplying & they'll start fermenting... which is a good thing.

It's great if you can plan a second brew (which is often bigger) & throw it directly on that yeast cake (when you transfer that one to a secondary fermentor after a week or so). This saves on the cost of yeast & the fermenation starts really quick.

When yeast are multiplying, they supposedly do produce more esters though... so if you desired more esters, you may not want to use a huge cake (like for a hefeweizen).

Yeah... dont worry, no one here can even afford too much yeast in a beer.

I pitch liquid yeast in 2 litre starters.
