i'm an iodophor guy, but i believe you can get either the foaming or non-foaming version of star-san. i like that iodophor doesn't foam as it seems to run off and not hang around like i'd imagine foam does. foam might be nicer for other surfaces where you'd question coverage rather than a carboy...

Yes.

I like Iodophor too. I think we're in a minority with using it. It's considered a little less environmentally-friendly then other sanitizers but I've found a little goes a long way.

i'd never heard anything about it being un-friendly, but a little does go a long way. half a cap makes a couple gallons which is more than enough for all my brewday sanitizing needs. i bought a 32oz bottle and it lasted several years.

So I'm sitting here with a carboy that has some foam left over in the bottom, and seems to have a bit of water droplets in it too.

Do I need to wait until the foam completely goes away to start putting things in to ferment?

I'm assuming you are referring to StarSan. If so, don't worry, go and use the carboy. I suggest you taste a bit of StarSan to see how neutral it is. You will be more comfortable knowing it won't be a problem. It's called a no-rinse sanitizer for a reason!
