Hi Matt... can I basically use the same recipe with a partial boil (as much as I can manage)?
Thinking about doing this really soon.... thanks.
sure a partial boil should be no problem. how much can you boil? also depending on your target gravity you will need to adjust the quantity of extract used. also you should make a starter if possible. let me know how it turns out.

Basic... Simple... West Coast Style.
I'm hoppy to see other IPA lovers out here.
I can't find a good IPA in the GTA to save my life. I'll be brewing this up again just as soon as I find a good LHBS.

8 lbs. Light LME
1 lbs. Crystal 60L
2 oz Mangun
1 oz Columbus
1 oz Willamette
Bring 2.5 Gallons to boil
Steep grains until boil
Remove grains and add 8 lbs malt
Bring back to a boil
Add 2 oz Magnum (30 min)
Add ½ oz Columbus (10 min)
Add ½ oz Willamette (end)
Cool. Pitch Yeast
Primary 2 weeks.
Add ½ oz Willamette & ½ oz Columbus Dry Hop

you'll have as much (or arguably less) luck finding a good HBS in the GTA as you had with your search for a good IPA...

I'm pretty happy with my most recent IPA:
13lbs 2-row
1lb caramunich
1lb sugar
4oz sterling @ 60
3oz centennial @ 20
3oz cascade @ 0
1.5oz each of cascade and centennial dry hop
Still not bitter enough for my tastes, but it is in the ballpark. I think this hop schedule would work better with a slightly lower gravity.

I'm thinking about doing a late extract addition for this batch... I just read this article from BYO:

If you want to hit the IBU of the original recipe, then yes. If you don't mind a 25% higher IBU, then no. It's your call. If you are concerned about balance in particular, calculate you gravity and take a look at this table:

I use S-05 yeast and pitch at 62F, then let it slowly climb to 68F over 4 days. Brought some to my homebrew club meeting on Wednesday night, everyone loved it. I'd say it's also a little dark for my liking, I used the caramunich because I had it on hand, but I prefer to use crystal 20/30 or honey malt in an IPA. In my opinion, caramunich and med crystal are better suited for pale ales and barleywines.
I'm going for a real big IIPA next month, 1.090 or so - mostly Magnum to bitter, with equal amounts of Simcoe and Citra for all other additions.

I plugged this mofo into ProMash and the IBUs are over 100... is 3 or 3.5 ounces of hops at 60 minutes WAY too much? I'm hoping for something along the lines of Dogfish Head 60 minute in terms of IBUs... which is apparently 60 IBUs....

This looks like a very bitter beer. Not that that's a bad thing. But I think that if you take an ounce or an ounce-and-a-half of your 60-minute hops and drop them in at 30 or 20 minutes, you can cut back a little on the bitterness, while increasing the hop flavour in the beer.

jesse, i wouldnt trust the IBU calculator. if your doing a partial boil on the stove you will not get near 100 IBU's. you certainly could use 2 oz as a bittering addition but i dont find the 3.5 oz addition to be too bitter. if you already have the amount of hops in the original recipe id up the 10min and flameout addition.

I'm brewing this as we speak... and I juuuuuuuuuuuuuuuuuussssttt about had my first boil over... if it wasn't for my fiance keeping a really close eye, it would have. As soon as I dropped the bittering hops in (went with 2 oz) I took my eye off it, and within 2 seconds it was nearly over...
