Interesting - I've always wondered - does a pint of stout on a nitro tap really NEED to be settled before being topped off?

I've had Mill St. Stouts that they just pour in one shot, and I can't taste the difference.

Probably more of a marketing stunt more than anything. I highly doubt it makes a huge difference, if any at all wether it's poured in one shot or three steps.

Interesting (I remember when the 2004 paper came out).

Pressure increases with depth, so it would change the fluid dynamics.
