Ok - I finally got around to trying the batch brewed with WLP001, and it's awesome.

It's pretty similar to the US-05, but I think the hop flavor is more pronounced. Who knows for sure, but it tastes awesome and of the 3 the most like Crazy Canuck.

Initially I had thought the yeast bite in the Danstar BRY-97 was subsiding, but... the last bunch were terrible. So I take that back.

I'll continue to use WLP001 for this recipe going forward, and will keep US-05 on hand for convenience when I'm in a pinch and don't have time to make a starter.

Great experiment, thanks for reporting back!

I haven't tried the Danstar, but I think the WLP001 is fruiter than the US-05. It seems to have more of a citrus flavour, which works well with the American hops. The US-05 is perhaps a bit more neutral, though it can throw off more vanilla-like flavours.

I use US-05 more than anything, partially due to convenience and cost, but I do really like the 001.

Thanks for the update, I brewed a batch with WLP001 on the weekend and can't wait to try it.

Cool - maybe it's the fruitiness of the WLP001 that I'm mistaking for hop flavour. In any case, I like it!

I butchered those thoughts (I was bottling/drinking last night). I meant to say the 001 had a peach-like flavour, which works well with the citrus from the hops.
