Unibroue Belgians. After 3 years or more, their yeast falls away and it tastes better

Duvel, though the bombers (EDIT: 750 ml champagne-style bottles) in the holiday gift packs are superior to the 330s for aging purposes i guess. But i have quite enjoyed aged Duvel.

^ the Duvel. I forgot a few 750mls in the lettuce crisper for a very long time, and boy did they come out nice - they were complex, subtle, layered and white wine-like (and yes - they were more crisp.) I forgot how amazing those were.

I never thought any of the Dupont beers benefitted from cellaring.

I'm not really convinced that the Goose Island ones will either. They're more like things that will maintain well in a cellar, rather than improve, imo.

I'm not sure either, but the wild yeast should certainly contribute to a change in character over time in Sophie and Matilda.
The original Matilda (no brett) did not change much at all after cellaring. I have some of the newer Matilda with brett (I think 2011, I'd have to check), but haven't sampled any in some time.
My cellar is still quite plentiful, but it pretty much only consists of Imperial Stout, Barleywine/Old Ale, Belgian Quad/Dark Strong, sours/wild ales, and some high abv barrel aged variants. Nothing else really improves with cellaring in my opinion.

I have a couple of the Ola Dubh 12 in the cellar.

It's not general list, but the Stormy Monday is a pretty good candidate for cellaring and it's still on LCBO shelves. I think there are still a few Kuhnhenn's kicking around too.
Is Cameron's Obsidian general list or seasonal? I have a couple of them in my cellar as well.
