I agree, it is not an explosive yeast by any means, but I still find it finishes in a reasonable time frame. Do you control the temp, or just ferment at an ambient 60F? Do you oxygenate? Really? I pretty much exclusively use US-05 and it is always done after a week unless I'm doing something different (fermenting really cold, or fermenting a really high gravity beer). Water Analysis

I have been brewing with well water for almost a year now and I think I have reached the point where I need to start playing around with my water chemistry a little bit. Does anybody know a good place to get a water report done? Preferably in KW, but the GTA would also work.
