Does anybody know of a recipe for making Caribbean style malta? I suspect somehow that it is very easy to make, and I quite like these sodas. Is it just some combination of malt extract, sugar/honey, hops and water?

The Bank's Malta uses a lot of adjunct in its recipe, mostly corn. Hops are a good idea as they will help resist bacteria spoilage (and they are one the life's truly good things!) They use a lot of corn sugar/syrup as well as wort.
Whatever you make up, drink it quickly. Bank's pasteurises Malta to avoid a rampant fermentation in the bottle.
