No, I let it ferment for one week first, and then racked it on top of 2.25 lbs of fresh durian. the beer was at 1.010 and still bubbling slowly when I transfered it, so I imagine it will still drop a couple more gravity points.

how many gallons did you brew? curious about your lbs/gallon ratio

5 gallons. I bought 2 smaller durians that together were over 7lbs but I only got 2.25 lbs of meat from them. I think it will be ok though because they are so intense.
