What're you drinking right now?
Mellow 8 year old Trois Pistoles from January 2006, still have 8 more. Definitely time to drink up this fully-matured Que/belgian ale. The spiciness has rounded out, leaving it very fruity - certainly the most long-cellared Canadian beer I've had!
This is also an amazing beer to cook with, using as you would a braising stock or a wine or port for deglazing - going to make some seared beef tenderloin, brown some shallots, simmer the deglaze with cream.

^I find it amazing how much TP improves with even as little as a year on it; I can only imagine 8 year old! I admit though that i'm not a big fan of unibroue yeastiness which I find very prominent in fresh TP, so aging makes a big difference for me, changing the beer from ok/not a favorite to delicious.

Though not forever. TP doesn't seem to die but I wonder if the peak of flavor is already there by four to five years and don't need to age further. I'll have a few more and see...
- update - Black Butter Porter - really nice 'porter-weight' feel to this, sessionable but has substance.
