the cat's been progressively popping out of the bag re: Bim's brewery.
i'm guessing late 2016/early 2017 for his brewery

He told me in September he was hoping to brew in Summer '16.

The new Bar Volo sounds interesting...not sure how you pull off a potentially pretentious beer list without attracting the pretentious beer geeks though!

According to untappd, moralite is still listed as a collaboration with the alchemist. After trying heady topper for the first time recently, I can taste similarities in hop profile. Also the first Quebec IPA I'd ever liked.

I had the imperial version, Immoralite, at Cask Days. Tastes extremely similar to Heady Topper. Really wish it was available around here.

i've talked to the other Dieu du Ciel brewers more than i've talked to Bim, so my praise doesn't come from any personal relationship.
but yeah, give it 2 years and we'll see what happens. i really do believe it will bring toronto to the forefront of North American brewing

I got that from your post. I may have talked to him when they shared a sour ale with me, was he at the DDC brewpub 5 years ago?
