I don't know who Bim is....well, not personally anyways....but whenever he eventually creates this magical brewery of his, it better blow everybody away based on the amount of BT worship he gets.
The new Bar Volo sounds interesting...not sure how you pull off a potentially pretentious beer list without attracting the pretentious beer geeks though!

Bim is considered one of the top brewers in Canada.
Shaun Hill from Hill Farmstead fame wanted Bim to come work with him. And Bim's done collabs with The Alchemist *edited* (I think Moralite was initially considered a collab, no?)
he has skills and he has clout. his brewery opening, with no hyperbole, may be one of the most important things that will happen to the Toronto brewing scene. when you play Connect the Dots between who's financially backing him (apparently) and who he's friends with in the brewing world, you will see how many doors will be opening. we'll go from a city that gets excited about a 8/10 APA launched locally to actually having crazy farmhouse beer and crazy brewers visit and crazy collabs and crazy bottles at bars

According to untappd, moralite is still listed as a collaboration with the alchemist. After trying heady topper for the first time recently, I can taste similarities in hop profile. Also the first Quebec IPA I'd ever liked.

I had the imperial version, Immoralite, at Cask Days. Tastes extremely similar to Heady Topper. Really wish it was available around here.

i've talked to the other Dieu du Ciel brewers more than i've talked to Bim, so my praise doesn't come from any personal relationship.
but yeah, give it 2 years and we'll see what happens. i really do believe it will bring toronto to the forefront of North American brewing
