Ah, the Dogsbody. Well, we had a little problem with this one as it was the first batch brewed at Heritage this time around. When I adapted the recipe for their equipment, I made an error in calibration. I remembered their system as being 15 hl. It is in fact 15 U.S. barrels. There is actually about 50 extra imperial gallons of capacity, so the beer was more watery. I also forgot that their mash efficiency is significantly lower thatn Church-Key's, so i underestimated the amount of malt. The only that worked out was the hops, which checked in at 30 IBU. Unfortunately, because of the problems listed above, this made for a watery, quite bitter beer.
We are on top of it now and subsequent batches will be up to scratch.

We're here to support you in this crazy, transitional time, Perry.

Meantime it sounds like the whole setup at Heritage is quite different, but I'm sure looking forward to enjoying the brews as they are tweaked into best form. Scotch Irish is pretty special in Ontario (the Tsarina Stout I had with breakfast yesterday has been ageing wonderfully.)

I was at Volo last Friday and it wasn't on tap. The wait staff didn't know if it had arrived or not. So...I guess I'll be at Volo on Friday again... :D
