Black Creek Historic Brewery
The target consumer is the tourist stream through Black Creek. It's really about the experience and education more than anything else. The hope is to eventually gather world wide attention. The plan is not to create a pub that is a facade of ye old pub but to build one that's the "real deal" . The HalfWay house basement, where both brewery and pub are, is really too small to accommodate more than a small group of people. The plan is to create a small town pioneer pub with as much of a pre 20th century ambiance as possible (costume, brewing h/w, beer).
WRT Trafalgar, like others have "dutifully" mentioned, I haven't been a big fan of several of Trafalgar's brews, but the Pioneer Dark Ale I tasted last Friday renewed my hopes in their abilities. The stuff on tap at Trafalgar seems MUCH better than LCBO bottle too.
Keep in mind that the stuff brewed ONSITE at Black Creek will not be sold commercially, rather, the same styles attempted at Black Creek will be brewed commercially, at Trafalgar, by Pioneer (ie under usual tightly controlled conditions). I've heard they they will allow ppl to take a growler home (not sure $) from site though. As mentioned, the BC set up is as close to pioneer days style brewing as possible, which won't allow for much consistency, as it will all be brewed _BY HAND_, as close to pre20th century tech as our nowadays regulations allow. Even cask fermentation will very according to temperatures, just a couple of degrees can make a big difference tasteise. So many variables brewing this way -which will probably make for some really great beer and also some not so great beer. Keep in mind brewers/imbibers back in that day would face the same issues.
WRT quality, they are mindful of quality and have mentioned they will dump any unimbibed cask stuff if it's beyond it's time. Perhaps they can use that to water the hop garden onsite, maintaining the circle of life! There's also rumours of growing barley, and even building a malting house onsite one day, if everything goes as planned (probably couple of years away).
I suspect it will take several weeks to fine tune the set up. To Trafalgar's credit, Dave/Mike/Tom/etc, they've all put a _LOT_ of money/time/energy up for this project. I think it's a VERY admirable project and I wholeheartedly applaud their efforts and hope that it is very successful. I encourge all other lovers of all that is brew to do the same!

Do you know where the bar will be located? I'd love to drop in after class/work as long as I don't have to pay admission to the park.

Apparently there's no entry fee between 3pm-4pm on weekdays. Black Creek are also going to arrange a couple of "pub nights" soon.
I was there yesterday and the IPA (for hop heads only) and Brown ale they have in oak casks is surprisingly amazing! They brewed an imperial stout Friday and were brewing a porter yesterday! If they are anything like the first 2 casks, I'm going to buy a couple of growlers (apparently the growlers will be shipped for arrival this Friday!).
If you like true cask brew with a strong oak backbone, you'll love this stuff! There's nothing like it anywhere in Ont and beyond!! If you don't like oakie notes then this isn't for you -keep out! LOL
The run "field to firkin" tours at 12:30 and 15:00... for only $4 bucks it's a pretty good deal for the hour long tour (include trip to mill and ends up at brewery) and 3 samples of the Pioneer stuff. I sound like a freaking promo guy now but judge it for yourself:

I was there yesterday and the IPA (for hop heads only) and Brown ale they have in oak casks is surprisingly amazing! They brewed an imperial stout Friday and were brewing a porter yesterday! If they are anything like the first 2 casks, I'm going to buy a couple of growlers (apparently the growlers will be shipped for arrival this Friday!).

Indeed. I recommend a BT contingent descend on Pioneer Brewery this Friday to test me and the wonderful oaked IPA!!
