I'm also quite fond of the latest Imperial Stout I brewed. Weighed in at a lab measured 18.9% abv, it has been oak aging for 6 months, and I just dosed the 5 gallon keg with an entire 26oz bottle of 40 Creek whisky. Dynamite stuff.

18.9% before adding the 40 Creek. My rough calculations would put it up to 20-21% abv with the whisky added.The_Jester wrote:Is that 18.9% before or after the dosing? I used US-05 for most of the fermentation, pretty impressive what it can do with loads of oxygen and incremental sugar feedings. Added a few others yeasts towards the end of fermentation, which didn't do a hell of a lot. I also "accidentally" froze it.
