Late Chinook Additions

Post by dale cannon »

I've been brewing mostly straightforward IPA's the past year...think I'll brew a kitchen sink IPA for kicks. I'm looking for a somewhat sweet malt backbone. BU:GU as it stands is 0.93. Lot's of late addition Chinook.

I have very little experience brewing with Chinook, and I'm wondering whether this quantity of late charge Chinooks will be overwhelming. Thoughts?

KIPA (10.5 gallons):

Appx. Targets:
OG - 1.073; IBU - 68; SRM - 10; ABV - 7.1%

Grain Bill:
26 lbs. 2-Row
1 lb. Amber malt
1 lb. Crystal 20
1/2 lb. Honey malt
1/4 lb. Special B
~4 oz. Acidulated malt (pH adjustment)

Water:
RO water treat with CaCl2, CaSO4 & MgSO4

Mash @ 152°F

Hop Bill:
1.8 oz. Magnum (10.0% AA) @ 60 min.
2 oz. Chinook (11.0% AA) @ 15 min.
2 oz. Chinook (11.0%) @ 10 min.
2 oz. Chinook (11.0% AA) @ 5 min.
2 oz. Chinook (11.0%) @ flameout

Yeast:
Split wort into 2 carboys, pitch Notty slurry

Pitch @ 62°F, allow to free rise to 65°F and hold until fermentation complete.

Pine forest is good...dank not so much. I have been contemplating splitting the 5 min. and flameout additions between chinook and a lighter/fruitier hop like galaxy or amarillo to make the dank pine forest a regular pine forest with fruit on top for balance.

1.8 oz. Magnum (10.0% AA) @ 60 min.
2 oz. Chinook (11.0% AA) @ 15 min.
2 oz. Chinook @ 10 min.
1 oz. each of Chinook & Galaxy (13.0% AA) @ 5 min.
1 oz. each of Chinook & Galaxy @ flameout

Of course this would add yet another element, but perhaps the end result will be better.
