I don’t care what the U.N. says, I don’t recognize countries that don’t produce beer.

I really enjoyed a cask of Wild Rose IPA dry hopped with apollo a couple years ago.
So I tracked down and bought a pound of apollo in the spring and used them in a DIPA. I was quite disappointed with the results. Not a lot of aroma or flavour, despite the general stats implying this variety has good oil content. I am not sure if this particular batch/farm of apollo hops just wasn't up to snuff, but I was not impressed.

I tried a beer Paul Dickey made with Apollo for the hob rub at Black Oak. He's got a pretty restrained touch, but it turned out incredibly dry in the way that you might get from a Sapporo or Asahi. I feel like you could make a good sushi beer with Apollo. I don't know whether that will bear up under scrutiny.
