I've done some good Bolongese with other stouts that turned out good, but they were always smaller.
Anyone ever done a bolongese meat sauce with an imperial stout?
I was thinking of using a Welllington, as it wouldn't be super crazy on the hops.
I was going to make it with bacon and for a lasagne so while the sauce might end up being a bit bitter, there'd be lots of fat in it.
Any thoughts, opinions?
