They'll be making much better products than Stratford Pilsner, that's for sure.

Understandable, but having tried the pilot batches I can say with 100% certainty that it will be light years better.

Stratford might be turning into less of a beer wasteland with these guys opening up and a 53 tap bar with a rooftop patio set to open in the next few months as well.

For sure.

Once Black Swan is up and running and that new bar is open (name not yet known) the city will instantly get a boost to its beer credibility.

I imagine I'll be at one or both places every night haha.

No argument it will be better than the Pilsner, but I always feel the need to defend the Stratford Common...somehow it comes out pretty well...if you can find it. Pazzo is the place I find it in Startford
https://www.pazzo.ca/pizzeria.html
and I know it shows up in TO at Cloak and Dagger and The Three Speed

Also c'mon and spill the bean on the 53 taps !?!

It's a mainstay at Ronnie's in Kensington.

The Stratford Common is a decent brew, but it's still not something I'd go out of my way to get.

The new bar is right downtown, a place called Backstage currently. Used to be Othello's and before that Falstaff's.

The word is the bar will be on the first floor with 53 taps, a steakhouse will be on the second floor, and then the roof will be a 60 seat patio.

They're apparently dedicated to staying away from the "big guys", although I do believe Sleeman will be there.

Hopefully most of the taps get dedicated to legit craft options.
