Scotch Irish Brewing Company is moving its contract from Heritage Brewing to Kawartha Lakes in Peterborough. The move was made to allow me to expand my production and to get into the bottle business. Heritage needs all of its capacity to expand as well and it seemed like an opportune time to part company. I will miss them, especially the exceptionally talented Dom Boulet, their head brewer.
All my products will continue to be made under my supervison and according to my recipes at KLB. I will have a more active hand in the production as well.
The future...well if all goes to my conservative plan and the bottle thing goes well, I will open a tiny, all cask conditioned ale brewery in Ottawa within 2 years. This will finally allow me to showcase a brewery, however small and to produce cask and bottle conditioned ales on a small scale. It will also double as a pilot brewery to test new ales. Hope it works!
Cheers!

Pretty close Joe...santé is also French for cheers...like in Italian...salute!
BTW, while Im writting, just found out you could buy Samichlaus in Quebec...its pretty rare that the SAQ has something the LCBO doesnt have...usually , its the other way around...so if any bartowelers are heading to Mtl (or Ottawa---Gatineau/Hull is just across the bridge), then it might be worth going to SAQ to stock up.
Take care

Thanks Luc!
The bottles are an exciting departure for me too. The Ottawa real ale brewery, when it happens, will be the jewel for me. I will be able to experiment and do "one off" brews, like old ales, barley wines, smoked ale etc. When its up and running I'll solicit Bartowels suggestions on what to brew.
Cheers!
