Just noticed that 3 Brewers in Toronto is offering a seasonal that includes Spelt in the grain bill.

Anyone ever done this? What would be the benefits? Never heard of this and kind of curious

I believe its like any other cereal grain. I've thought of using it because spelt was a component of many saisons/farmhouse ales back in the day.

I've been meaning to use it in a saison, just haven't bothered yet, maybe next summer. They sell flaked spelt at the same health food store I buy my flaked wheat from.
